In-N-Out Pizza!

You. Guys.

I am incredibly pumped up for this recipe. I honestly wasn't even trying to create this when I first set out. It was a result of not having the ingredients on hand for the recipe I was actually planning to make. Pretty typical for me actually.

What I did happen to have on hand was an extra yeast dough pizza crust (recipe from Soury, you can find it on her Instagram if you are interested), some ground beef, half of an onion, and all the necessary parts for a killer copy-cat In-N-Out spread! Clearly I had no choice but to create this masterpiece.

First thing first, I will lay out the spread for you. While I did a little research first, pulling pieces from some recipe creating geniuses around the internet,  I didn't technically pull from one solo inspiration source (& I also had to keto-fy it all before it came together) so I feel comfortable calling this 'my own'.

Second, I have to mention that none of the measurements will add up to one perfect pizza. You will have spread leftover. You will have ground beef leftover. Trust me though, this is a good thing. You can use these for In-N-Out burger bowls/dip down the line! (Hello, keto cheezits!)

COPYCAT SPREAD INGREDIENTS:
  • ½ cup mayonnaise 
  • 3 Tbsp no sugar added ketchup (I went with Heinz and the flavor was perfect. Let me know if other versions work as well!)
  • 2 Tbsp Pickle Relish (I buy dill relish with no sugars. Add the required amount to a small bowl, and mix in some liquid stevia drops to mimic sweet pickle relish)
  • 1 ½ teaspoons erythritol
  • 1 ½ teaspoons distilled white vinegar


COPYCAT SPREAD PROCESS:
  1. Ready for this? Mix everything together and refrigerate while you make the rest of the components. The end.

CARAMELIZED ONION INGREDIENTS:
  • ½ Tbsp Butter
  • ½ Yellow Onion
  • Sprinkle of Salt
  • Sprinkle of Erythritol
  • 1 Tbsp Water (as needed)

    CARAMELIZED ONION PROCESS:

    1. Chop onion into chunks. (Sizing is up to you, I tend to go with slightly bigger chunks than your typical "diced" onion)
    2. Place your frying pan over medium heat and melt the butter. 
    3. Once butter is melted and hot, toss in your onion. Give it a stir to coat the onions and then slowly place your spatula down and back away. (They have to sit relatively un-stirred in order to properly caramelize)
    4. Check back every few minutes to make sure they aren't burning. Give a light stir. If they seem to be drying out, add ½ Tbsp of water and stir.
    5. Once they are close to being finished, sprinkle lightly with some salt and some erythritol. Stir and then let finish out their caramelizing process.
    6. Remove onions from pan and set aside. Keep pan on the heat. (We'll use this for the ground beef now)


    MUSTARD FRIED BURGER INGREDIENTS:
    • 1 pound of Ground Beef
    • 1 Tbsp Yellow Mustard
    • Sea Salt to taste
    • White Pepper to taste
    • ¼ Tsp Trader Joe's Onion Salt
    • ¼ Tsp Garlic Powder

    MUSTARD FRIED BURGER PROCESS:
    1. Add mustard to the bottom of the pan, then toss in the ground beef and mix around.
    2. Add all of your seasonings to the pan and mix together while browning the ground beef.
    3. Once brown, drain the excess grease from the pan. Return to the heat, add in your caramelized onions and let cook for a minute or two longer.
    4. Remove from heat and set aside.
    ADDITIONAL PIZZA INGREDIENTS:
    • Cheddar Cheese
    • Extra Caramelized Onions (You can save some from the original mixture or skip this bit entirely if they are all mixed in)
    • Thinly Sliced Pickles

    ASSEMBLY:
    1. Lay your crust on a parchment lined baking sheet. If using the Yeast Dough Crust, it should be par-baked and your oven should be set to 450. (If using a different crust, I would suggest following the bake times for that particular brand/recipe)
    2. Top with your spread mixture. I could give you measurements, but really this will be your preference. A heavy hand never hurt anyone when it comes to saucing up a pizza though.
    3. Spread your ground beef mixture on top of the spread. 
    4. Sprinkle some cheddar cheese on top of the ground beef, and garnish with some sliced pickles. 
    5. Pop into the preheated oven for about 5-7 minutes. If you are feeling adventurous, switch to broil for the final minute. 
    6. Remove from the oven, slice, enjoy!
