Blueberry Cobbler Marshmallows

Stuffing marshmallows full of all of my favorite things has become one of my newest hobbies. This time around I had a fresh batch of Lolli's Low Carb Granola on hand, a packaged of dried blueberries I had been trying to find the perfect use for, and a leftover eggwhite from an ice cream experiment. It's honeslty like the stars aligned in the middle of my kitchen.. Jumping in!  INGREDIENTS: ¼ Cup Allulose ½ Cup Erythritol Lolli’s Low Carb Granola, Crumbled. ( KetoOnDani for a discount on your granola order! ) 1 Egg White (30g) 1.5 Tbsp Beef Gelatin Powder 2 Tbsp Water (for the gelatin) ¼ Cup Water 1 Tbsp Cinnamon Roll Jordan’s Skinny Syrup Dried Blueberries (No Sugar Added), Chopped. PROCESS: Begin by preparing a sheet/container/mold for your marshmallow mixture. I use a deep baking sheet, place a layer of parchment paper down, and then either sprinkle with coconut flour or give a quick spritz with coconut oil cooking spray. Then just set aside ...

Low Carb Butterscotch Sauce

INGREDIENTS: 56g Sweet Cream Butter 1 Tbsp Allulose 3 Tbsp Brown Swerve 1/2 Cup Heavy Whipping Cream 1/2 tsp LorAnn Oils Butterscotch Flavor PROCESS: Melt butter in small saucepan over medium low heat until golden brown. Add Allulose, Brown Swerve, Heavy Whipping Cream, and Butterscotch Flavor and whisk until all combined.  Turn the heat to very low, and set a time for 15 minutes. Do not stir. When your timer goes off, remove saucepan from heat and whisk it all together again. It will seem thinner than you want at this point. Allow sauce to begin cooling, whisking all together every 5 or so minutes to ensure it combines and cools properly. (It will thicken up as it cools off) Transfer to glass jar and store in the refrigerator.  **It will 'harden' in the fridge. You can pop it back in the microwave at 30% power for 10 seconds at a time, whisking in between, in order to bring it back to ooey gooey thick butterscotch sauce!

Strawberry Limeade Protein Cupcakes

As I mentioned on my Instagram - VMI Sports reached out to see if I wanted to create a recipe for them using their Protolyte Protein Powder. To which I replied with a resounding YES PLEASE, and immediately started planning all of the strawberry flavored recipes. This recipe comes in three parts. I feel like it will be easiest to break it down into the individuals to avoid confusion.... hopefully. If you followed along with stories on Instagram, you already know what I was attempting with this one. If not, I will try and give you a brief version here. (We all hate the recipe blogs with four years worth of text before the actual recipe, amirite?) Soury (@my_keto_journal) and I were talking about some old school recipes from the carb-y days, and she sent me a link to her old blog. One post in particular. Peanut Butter, Banana, Elvis Bars. They looked beyond magical, and so the hunt for a keto dupe began. This is my first attempt, and while I have a few more iterations in mind to mimic the original - this is a damn good recipe in itself. I needed to share it. Ice Cream Base Recipe

Looking for a keto friendly ice cream with ingredients you can pronounce? Yeah, so was I. haha I know there are some new companies on the scene lately, but as hard as I looked every time I went shopping, I could never find anything aside from Halo Top. That is when I set out to create my own version. To be fair, this was inspired by a fellow Keto Instagrammer - Low Carb Lex! I took her recipe, put my own spin on it, and here we are. It is super easy to switch up the flavors and mix-ins to make your own unique creations each time. Which we all know is my favorite aspect to any recipe. I rarely make the exact same thing twice. Anyyyyway, lets just dive right in. Low Carb Spicy Chili

As I mentioned in my initial Instagram post, I know there are a million chili recipes floating around. I also know I spent hours looking through all of them trying to find the perfect one - only to leave myself confused and indecisive. I decided then to just wing it myself and see how things turned out. Surprisingly, I think I nailed this one on the first try! (My husband went back for thirds already - that is the true test. He isn't one to tip-toe around my little chef feelings) Warning, there is a little kick to this one, but that is how I like my chili so... Keto-Breaded Chicken Patties (Air Fryer Version)

As I mentioned on Instagram - this one is my own twist on the recipe from Nicole over at Oh My Keto . My husband and I are recently obsessed with these. I was able to make 11 patties with just under a pound of chicken breast, and they make the best sandwiches when you pair them with some cheesebuns and a little dill relish. (Well.. and mayo and cheese, but you get it) I will give you the details on how we made ours, but I think you can tweak it even further to really make they something to write home about. Feel free to adjust as needed to suit your taste. I feel like adding some of your favorite Daks could really seal the deal for these. I have done a few biscotti variations since I have been keto, and they have all been tweaked versions of this recipe . If you want to try the original - it is totally worth it. She creates such amazing keto treats and I truly never want to steal credit or steer people away from the ones who put in all ht hard work initially. That being said, I did put my own spin on these so if you are interested in recreating the Raspberry Macadamia Nut version exactly, follow along below! Sausage Balls

I think there are quite a few recipes out there for delicious sausage balls, but I threw these together last night and honestly shocked myself with how delicious they came out. To be honest, half of the reason I started this blog was so that I could refer back to my own recipes as well. If I don't write them down relatively quickly, they will 100% be forgotten. Not only are these delicious, but they are a breeze to make. In the Air fryer, no less! INGREDIENTS: 16oz Jimmy Dean Sausage (I am sure any ground sausage would work, but if you want specifics..) 2oz Cheddar Cheese, Shredded Trader Joe's 21 Salute Seasoning Salt  Pepper 2 Servings Keto Cornbread (I used some of the Kawaii Treats & Eats corn-free cornbread I had on hand. Valentines Day Series: Box of Chocolates | Caramel Coconut

We're back with just the filling ingredients/process on this one. This one is slightly different again. The caramel has to be firm in order to pop them out of the molds, but if you put your chocolate into the refrigerator or freezer it loses it's beautiful shine, so I didn't want to go that route. I thought it would be best to get the fillings all worked out, then cover them lovingly in a waterfall of melted chocolate and hope it didn't all come crashing down around me. To my utter surprise, it worked! Diving in! INGREDIENTS: 38g Caramel (I don't have my own recipe for this one. White Chocolate Bars

As I mentioned in my post on Instagram - I will not be taking full credit for this one. This is a mixture of a couple different recipes I found online. Both Maya from Wholesome Yum & The Traveling Pastry Hunter put in the time and effort to work out all the details the first time around, so I wanted to be sure to give them credit. That being said, I mixed them together due to the ingredients I had, my need for them to be stable at room temp, and possibly a little bit of laziness thrown in for good measure. I am including an "Tools" section this time as well, since I am pretty sure without the immersion blender this would not be as amazing as it is. Valentines Day Series: Box of Chocolates | White Chocolate Peanut Butter

This one is incredibly simple if you already have white chocolate handy - and my husband thinks they turned out the best! (Strictly speaking of looks, he doesn't like peanut butter. I thought about having him committed since that simply doesn't seem natural to me... but to each their own I suppose.) Diving right in! INGREDIENTS: 40g White Chocolate 2 Tbsp Peanut Butter PROCESS: Chop up your white chocolate into small chunks and melt down. You can do this over a double boiler, but I just use the microwave. Same as the other chocolate melting I have mentioned. Chop finely, microwave for 30 second intervals at 30% power. Stir between each microwave sesh. Once you get it to a stage where most of it is melted and there are just a few chunks left - stir your heart out. Once you get your chocolate fully melted down - you simply mix it into the peanut butter.  Pour this mixture into your molds of choice (hopefully already lined with chocolate) - allow to set up at room...

I am thinking the best way to go about this is to just give you the details for the fillings themselves, and then you can refer back to one of my previous posts for the chocolate work. I'm Back! I am sure you know by know how terrible I am at keeping up with these posts... I'm trying, I promise! This will be a quick, 'straight to the post' post. You guys asked for it, so here it is! This was a spur of the moment glaze I whipped up - specifically so I could add holiday colors and make my cookies look a bit more festive without too much effort. I'll call it a success! Bonus? It tastes good and barely alters the macros of the cookies as a whole. It seems like a fairly small batch, but it glazed 20 cookies for me with leftovers. Okay. So to start this one off, I need to mention that I don't make the same exact version every time. I switch this one up often. That being said - the seasoning measurements are not going to be exact. If you realllyy need me to give specifics there, I can try and measure it out like a responsible adult next time and update the post. Moving right along, this recipe is almost fail-prool. I have made it about 100 times and have yet to have a real failure on my hands. Which we all know still happens to be in the kitchen more often than I would like to admit.
