Low Carb Spicy Chili

As I mentioned in my initial Instagram post, I know there are a million chili recipes floating around. I also know I spent hours looking through all of them trying to find the perfect one - only to leave myself confused and indecisive. I decided then to just wing it myself and see how things turned out. Surprisingly, I think I nailed this one on the first try! (My husband went back for thirds already - that is the true test. He isn't one to tip-toe around my little chef feelings) Warning, there is a little kick to this one, but that is how I like my chili so... Hopefully you do too? haha  Lets just dive right in, shall we? INGREDIENTS: 1 lb Ground Beef 1 Can Rotel Chipotle (roughly a cup) 1 T Tomato Paste 2 Garlic Cloves, Minced 2 tsp Chili Powder 1 tsp Cumin ¼  tsp Pepper 1 tsp Salt ½  tsp Celery Salt 100g Bell Pepper, Chopped (About 1.25 peppers. Keto-Breaded Chicken Patties (Air Fryer Version)

As I mentioned on Instagram - this one is my own twist on the recipe from Nicole over at Oh My Keto . My husband and I are recently obsessed with these. I was able to make 11 patties with just under a pound of chicken breast, and they make the best sandwiches when you pair them with some cheesebuns and a little dill relish. (Well.. and mayo and cheese, but you get it) I will give you the details on how we made ours, but I think you can tweak it even further to really make they something to write home about. Feel free to adjust as needed to suit your taste. I feel like adding some of your favorite Daks could really seal the deal for these. INGREDIENTS Chicken Patties 1lb Chicken Breast 1 Large Egg 1 tsp Garlic Powder 1 tsp Sriracha 1 Tbsp Dijon Mustard ½ tsp Paprika ½ tsp White Pepper Pickle Juice (enough to cover chicken to brine) Breading ¼ cup Nutritional Yeast ¼ cup Parmesan Cheese ¼ cup Pork Rind Crumbs (feel free to grind some actual pork rinds in the food...

Air Fried Chicken Drumsticks

This is another super simple meal idea that we recently fell in love with! You can switch this up so many ways - from the seasonings in the breading to the sauce you add on top. The possibilities are endless. (Those are my favorite recipes, if you have not yet learned that about me.) I should also mention that the breading mixture makes way more than you need for 3-4 drumsticks. I simply packed mine back up and used it to bread some veggies and some more chicken the following day. Feel free to half the recipe if you prefer. INGREDIENTS: 4 Chicken Drumsticks  Pickle Juice (enough to cover the drumsticks to brine) 20g Nutritional Yeast (roughly ¼ cup) ¼ cup Parmesan Cheese 1 tsp Garlic Powder Salt to taste (I just sprinkle some in the mix and call it a day) 1 Large Egg PROCESS: Add chicken drumsticks to a bowl (preferably one with a lid) and cover with pickle juice. Sausage Dip

I think everyone has their own version of a good sausage dip, but this is a favorite in our household and I felt I should definitely share it. One of the best things about a good Sausage Dip, is that you can easily tweak little things to make it your own. Hopefully you all enjoy this version as much as we do! INGREDIENTS: 1lb Ground Sausage (we use Jimmy Dean, but feel free to grab a 'cleaner' version) 4oz Cream Cheese (originally we used 8, but to save calories I cut this back and it is equally delicious) 1 Can Rotel (Or any other can of diced tomatoes with green chilis) 3oz Mozzarella Cheese, shredded 2T Maple Syrup (Sugar Free - We use the Smucker's brand for this as it is more of a liquid consistency) PROCESS: Begin by simply browning your sausage over medium heat. In-N-Out Pizza!

You. Guys. I am incredibly pumped up for this recipe. I honestly wasn't even trying to create this when I first set out. It was a result of not having the ingredients on hand for the recipe I was actually planning to make. Pretty typical for me actually. What I did happen to have on hand was an extra yeast dough pizza crust (recipe from Soury, you can find it on her Instagram if you are interested), some ground beef, half of an onion, and all the necessary parts for a killer copy-cat In-N-Out spread! Clearly I had no choice but to create this masterpiece. First thing first, I will lay out the spread for you. While I did a little research first, pulling pieces from some recipe creating geniuses around the internet,  I didn't technically pull from one solo inspiration source (& I also had to keto-fy it all before it came together) so I feel comfortable calling this 'my own'. Okay. So to start this one off, I need to mention that I don't make the same exact version every time. I switch this one up often. That being said - the seasoning measurements are not going to be exact. If you realllyy need me to give specifics there, I can try and measure it out like a responsible adult next time and update the post. Moving right along, this recipe is almost fail-prool. I have made it about 100 times and have yet to have a real failure on my hands. Which we all know still happens to be in the kitchen more often than I would like to admit.
