Air Fried Chicken Drumsticks

This is another super simple meal idea that we recently fell in love with! You can switch this up so many ways - from the seasonings in the breading to the sauce you add on top. The possibilities are endless. (Those are my favorite recipes, if you have not yet learned that about me.)

I should also mention that the breading mixture makes way more than you need for 3-4 drumsticks. I simply packed mine back up and used it to bread some veggies and some more chicken the following day. Feel free to half the recipe if you prefer.

INGREDIENTS:

  • 4 Chicken Drumsticks 
  • Pickle Juice (enough to cover the drumsticks to brine)
  • 20g Nutritional Yeast (roughly ¼ cup)
  • ¼ cup Parmesan Cheese
  • 1 tsp Garlic Powder
  • Salt to taste (I just sprinkle some in the mix and call it a day)
  • 1 Large Egg


PROCESS:

  1. Add chicken drumsticks to a bowl (preferably one with a lid) and cover with pickle juice. Cover the bowl and refrigerate for 30-45 minutes.
  2. While waiting on the drumsticks, mix together all of your breading ingredients: Nutritional Yeast, Parmesan Cheese, Garlic Powder, and Salt. Turn out mixture onto a plate (or any flatter surface - I have found it is easier to bread this way than to have it in a bowl)
  3. Add egg to a small bowl and give it a good whisk.
  4. Once your chicken is done with its pickle juice bath, remove from the bowl and pat dry with a paper towel.
  5. Dip the dry drumstick into your egg (I had to get my hands a bit dirty and manually give each one a good rub down with egg to make sure it was coated) and then place on the plate with your breading mixture.
  6. Really you can bread them however you like, but to avoid the sticky mixture all over your finger tips (you know, the one that then removes all of the breading from your chicken when you go to remove it from the plate?) I find it best to place the chicken on top of the breading, then use my dry hand to pick up more breading and sprinkle it on the top of the chicken. Once it is all lightly coated, I give it a good roll around the plate. 
  7. Remove the chicken from the breading plate and add to the basket of your air fryer. 
  8. Repeat this process for all remaining drumsticks. Once all drumsticks are in your basket, spritz lightly over the tops of them with coconut oil spray.
  9. Air fry at 390 for 10 minutes. Once the timer goes off, remove the basket and flip the drumsticks. Give another spritz with coconut oil and place back into the air fryer at 390 for 8 minutes.
  10. Once the timer goes off this time, remove from the fryer, add your sauce of choice, and devour while warm, juicy, and delicious!
