Pumpkin Marshmallow Tarts

Snickerdoodle Tart Crust (4 Mini Tarts) INGREDIENTS 1/2 Cup (40g) Snickerdoodle Protolyte (Promo Code: Dani10) 1/2 Cup Lupin Flour ( g) 1/2 Cup Almond Flour (52g) 1/4 Cup Erythritol 4 Tbsp Butter, melted 8 Drops One On One Flavors "Pie Crust" Drops 1/8 tsp Pink Salt  PROCESS: Preheat oven to 325 degrees. Mix all dry ingredients together.  Add flavor drops to your melted butter, then pour it into the dry mixture and combine with a fork. (It will seem crumbly, but it comes together!) Press crust mixture into your pie pan or tart pans. Pack it in really well with the bottom of a measuring cup or a glass.  Place in oven for about 10 - 14 minutes. (This will depend on your oven and baking dishes. Check and remove from oven when the crust edges begin turning brown) Set aside to cool completely. Low Carb Butterscotch Sauce

INGREDIENTS: 56g Sweet Cream Butter 1 Tbsp Allulose 3 Tbsp Brown Swerve 1/2 Cup Heavy Whipping Cream 1/2 tsp LorAnn Oils Butterscotch Flavor PROCESS: Melt butter in small saucepan over medium low heat until golden brown. Add Allulose, Brown Swerve, Heavy Whipping Cream, and Butterscotch Flavor and whisk until all combined.  Turn the heat to very low, and set a time for 15 minutes. Do not stir. When your timer goes off, remove saucepan from heat and whisk it all together again. It will seem thinner than you want at this point. Allow sauce to begin cooling, whisking all together every 5 or so minutes to ensure it combines and cools properly. (It will thicken up as it cools off) Transfer to glass jar and store in the refrigerator.  **It will 'harden' in the fridge. You can pop it back in the microwave at 30% power for 10 seconds at a time, whisking in between, in order to bring it back to ooey gooey thick butterscotch sauce!

Chayote "Apple" Sauce

Ingredients: 2 Chayote Squashes (226g), cubed 2 Apple Cinnamon Tea Bags  2 Cups Water 1.5 Tbsp Sweet Cream Butter 2 tsp Lemon Juice 3/4 tsp Apple Pie Spice 1/4 tsp Cinnamon 1 Tbsp Brown Swerve 1 Tbsp Pyure 9 drops One on One flavors Double Apple Process: Toss 2 cups of water into a pot with your tea bags and begin to bring to a boil. (I do this while I am cubing my chayote) Remove tea bags from water, and replace with Chayote cubes. While Chayote boils, mix together Butter, Spices, Lemon Juice, One on One drops, and Sweetener in a small bowl. Set aside. Allow Chayote to boil until soft. (I boiled all of the water/tea out of the pot before it was soft enough for my liking) , if you have water left, strain and return chayote to pot. Turn heat down to medium/low. Add your butter/spice mixture to pot with Chayote and allow to all cook down together on low heat.  Pop immersion blender into the pot and give it a good blitz. Enjoy!

Elvis Bars: Initial Trial Run

If you followed along with stories on Instagram, you already know what I was attempting with this one. If not, I will try and give you a brief version here. (We all hate the recipe blogs with four years worth of text before the actual recipe, amirite?) Soury (@my_keto_journal) and I were talking about some old school recipes from the carb-y days, and she sent me a link to her old blog. One post in particular. Peanut Butter, Banana, Elvis Bars. They looked beyond magical, and so the hunt for a keto dupe began. This is my first attempt, and while I have a few more iterations in mind to mimic the original - this is a damn good recipe in itself. I needed to share it. Ice Cream Series: Blueberry Cobbler Ice Cream

You guys! This blueberry cobbler ice cream is one recipe I am quite obsessed with. I switched up the base a little bit to adjust for the flavor I wanted, but it turned out really well. I will lay it all out for you here in case you would like to try this version for yourself. (Which I highly recommend) I would also like to note that I hear you can make this without the ice cream maker as well, but I have not tried it personally. If you want to give it a shot, you should be able to mix it all together, pop it into the freezer, and then mix it every 30 minutes or so. I would wait until you have almost the perfect consistency and then add in your mix-ins. If you do give this a try, let me know how it turns out! As I mentioned in my initial Instagram post, I know there are a million chili recipes floating around. I also know I spent hours looking through all of them trying to find the perfect one - only to leave myself confused and indecisive. I decided then to just wing it myself and see how things turned out. Surprisingly, I think I nailed this one on the first try! (My husband went back for thirds already - that is the true test. He isn't one to tip-toe around my little chef feelings) Warning, there is a little kick to this one, but that is how I like my chili so... I have done a few biscotti variations since I have been keto, and they have all been tweaked versions of this recipe . If you want to try the original - it is totally worth it. She creates such amazing keto treats and I truly never want to steal credit or steer people away from the ones who put in all ht hard work initially. That being said, I did put my own spin on these so if you are interested in recreating the Raspberry Macadamia Nut version exactly, follow along below! Air Fried Chicken Drumsticks

This is another super simple meal idea that we recently fell in love with! You can switch this up so many ways - from the seasonings in the breading to the sauce you add on top. The possibilities are endless. (Those are my favorite recipes, if you have not yet learned that about me.) I should also mention that the breading mixture makes way more than you need for 3-4 drumsticks. I simply packed mine back up and used it to bread some veggies and some more chicken the following day. Feel free to half the recipe if you prefer. INGREDIENTS: 4 Chicken Drumsticks  Pickle Juice (enough to cover the drumsticks to brine) 20g Nutritional Yeast (roughly ¼ cup) ¼ cup Parmesan Cheese 1 tsp Garlic Powder Salt to taste (I just sprinkle some in the mix and call it a day) 1 Large Egg PROCESS: Add chicken drumsticks to a bowl (preferably one with a lid) and cover with pickle juice. Sausage Dip

I think everyone has their own version of a good sausage dip, but this is a favorite in our household and I felt I should definitely share it. One of the best things about a good Sausage Dip, is that you can easily tweak little things to make it your own. Hopefully you all enjoy this version as much as we do! INGREDIENTS: 1lb Ground Sausage (we use Jimmy Dean, but feel free to grab a 'cleaner' version) 4oz Cream Cheese (originally we used 8, but to save calories I cut this back and it is equally delicious) 1 Can Rotel (Or any other can of diced tomatoes with green chilis) 3oz Mozzarella Cheese, shredded 2T Maple Syrup (Sugar Free - We use the Smucker's brand for this as it is more of a liquid consistency) PROCESS: Begin by simply browning your sausage over medium heat. Valentines Day Series: Box of Chocolates | Caramel Coconut

We're back with just the filling ingredients/process on this one. This one is slightly different again. The caramel has to be firm in order to pop them out of the molds, but if you put your chocolate into the refrigerator or freezer it loses it's beautiful shine, so I didn't want to go that route. I thought it would be best to get the fillings all worked out, then cover them lovingly in a waterfall of melted chocolate and hope it didn't all come crashing down around me. To my utter surprise, it worked! Diving in! INGREDIENTS: 38g Caramel (I don't have my own recipe for this one. As I mentioned in my post on Instagram - I will not be taking full credit for this one. This is a mixture of a couple different recipes I found online. Both Maya from Wholesome Yum & The Traveling Pastry Hunter put in the time and effort to work out all the details the first time around, so I wanted to be sure to give them credit. That being said, I mixed them together due to the ingredients I had, my need for them to be stable at room temp, and possibly a little bit of laziness thrown in for good measure. I am including an "Tools" section this time as well, since I am pretty sure without the immersion blender this would not be as amazing as it is. Well, if you guys are not new here - you know how terrible I am at keeping up with this blog. My intention this year is to get better at the upkeep, and eventually clean the blog itself up to be slightly easier to navigate. In the meantime, I want to make a Valentine's Day series. I am not one to really celebrate the holiday itself, but any excuse to play with a theme in the kitchen - I am all over. The first thing I wanted to tackle, was the traditional chocolate box!  So far I have managed to create my own take on the Strawberries & Cream Truffles by Lindt. You know the ones. They make their appearance for every holiday, and Valentine's Day is no exception. So far 'my recipe' is really just a mish-mash of recipes my favorite bloggers have created. Swiss Meringue Buttercream (No Heat!)

Okay, so this is definitely a 'cheat' version of Swiss Meringue Buttercream, but I have tried it the long tedious way as well and this honestly came out better. I think it is due to the erythritol granules not dissolving properly when heated (at least not the same way regular sugar would)? Every time I tried to do this over the stove it felt like my arm was about to fully fall off my body before I got it to the stage I was looking for. That is when I set out to find a recipe for SMBC that did not involve that much of a workout. I stumbled upon this recipe , and decided to tweak it a bit to fit my sugar-free needs. Lets dive in!   This one is actually fairly easy since most of the flavor comes straight from the tea. That also means that it is super easy to switch up the flavor profile by simply switching up the tea choice! (If you know me at all, you know those are my favorite recipes - ones you can alter easily for endless variety) Second thing I would like to mention is that this is an alteration of Maria Emmerich's Apple Bundt Cake recipe. Which I linked here since I certainly cannot take credit for the full recipe. I will still post my version since I feel the cupcake as a whole is different enough to not be a complete rip-off. In-N-Out Pizza!

You. Guys. I am incredibly pumped up for this recipe. I honestly wasn't even trying to create this when I first set out. It was a result of not having the ingredients on hand for the recipe I was actually planning to make. Pretty typical for me actually. What I did happen to have on hand was an extra yeast dough pizza crust (recipe from Soury, you can find it on her Instagram if you are interested), some ground beef, half of an onion, and all the necessary parts for a killer copy-cat In-N-Out spread! Clearly I had no choice but to create this masterpiece. First thing first, I will lay out the spread for you. While I did a little research first, pulling pieces from some recipe creating geniuses around the internet,  I didn't technically pull from one solo inspiration source (& I also had to keto-fy it all before it came together) so I feel comfortable calling this 'my own'. Jalapeno Chicken Poppers (Copycat Recipe)

Back with another copycat recipe (shocker, I'm sure). If you watched my stories over the past few weeks, you would have seen Eddie and I finally try some Real Good Foods poppers. While I did enjoy them, I felt they were just okay for the amount of money we spent on them. I also felt I could definitely recreate them if I really set my mind to it. Surprisingly enough... I think I actually nailed it! Now, before I get ahead of myself - they may not be exactly the same as their version, but Eddie and I loved these from the first batch. They are definitely a bit time consuming, but I think making them ahead and freezing them could be a perfect option for quick dinners down the line. Plus, as with any recipe I rave about, they are so easy to switch up flavor-wise. Almond Butter "Milk Shake"

Here is another super simple one for you. So simple, I almost don't consider it a 'recipe' - It is literally just a combination of ingredients and a little blender action. The hardest part of this entire process is cleaning your blender afterwards. The second thing I truly love about this 'recipe' is that you can swap out so many different parts to create a whole new flavor combination. One basic recipe creates SO many shakes. It's amazing. THE BASICS: 1Tbsp Almond Butte r  (or any other nut butter your heart desires)  8oz Unsweetened Almond Milk  (or any other milk replacement you have on hand. Full disclosure: This was adapted from a non-keto recipe. I have yet to reach the stage of my life where I can fully wing it from scratch and call it a success, but I have found I am pretty damn good at turning a non-keto item into a keto-approved version. That being said, I'm just going to dive right in!
